- 250 grams mince meat or Chicken
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 small onion diced

- 1 tbsp Red chilli or to taste
- 1 tsp garam masala powder
- 1 tbsp tomato paste or 1 small diced tomato
- 3 tbsp oil for cooking

- The dough will be same in both only the filling will differ. In a bowl add the warm milk add sugar to it. Stir well then add yeast and allow it to activate for 8-10 minutes. In an other bowl add all the dry ingredients. Mix it and add oil to it. Mix well then add the yeast mixture litte at a time and knead a soft and smooth dough. Knead it for about 10-15 minutes to get a smooth texture of dough. Grease a bowl and put the dough in it. Cover it and keep it in a warm place to rise.
- It may take around 1 hour to rise. If you are kneading your dough in a food processor then knead only for 5-7 minutes after the dough binds up and you will get the same result. In the mean time let's prepare the filling. you can make 2 types of arabic filling first one is authentic and the second one is my style. The second one which is in my way can also be used as a dip.
- 1st arabic filling--In a bowl mix all the ingredients and it's ready. You can store this in the refrigerator and it will be good to go for 3-4 days. 2nd arabic filling--In a bowl mix all the ingredients and you are ready with the filling. You can make this in advance and refrigerate it for 3-4 days.
- For turkish filling--Heat oil in a pan add diced onions saute it till translucent. Then add ginger garlic paste and saute till the rawness goes away. Then add the mince meat and mix well. Cook till all the water dries up. Then add all the spices and mix really well. Then add the tomato paste and mix well. Cook till the meat tenderize and the oil oozes out. Off the flame and let it completely cool down. If you are using diced tomatoes then add with the mince meat and cook.
- Making the fatayers Make balls of the dough just like a big lemon balls and if you want your fatayers to be small then make small lemon size balls. Cover all the balls. Take one at a time and roll a cylindrical disc. Add the filling and fold longitudinally from one side then the other side. Then press the top and then the bottom till 1/4 of the size of fatayer.It will be a boat like shape. Follow the pictures to understand more for assembling.
- Make all the fatayers the same way with both the filling or the filling of your choice. For cheesy mince fatayers add some Shredded cheese on top of the mince meat. Egg wash all the fatayers and bake it in a preheated oven at 180°c for 20-25 minutes or until golden brown.
