- For naan dough :
- 3 cups maida
- 1/2 cup lukewarm milk
- 2 tbsp honey
- 1/2 tsp yeast
- 2 tbsp curd

- For garlic butter :
- 4 tbsp butter
- 2 tbsp chopped garlic
- 2 tbsp chopped coriander
- For chicken tikka:
- 500 grams boneless chicken
- 2 cloves + 2 cardamoms + 2 peppers + 1/2 tsp jeera (roast)
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1/2 tsp red chilli powder
- Pinch turmeric 1/2 lemon
- 4 tbsp yogurt
- For gravy :
- 3 tbsp oil
- 1/4 tsp shahi jeera
- 2 cardamoms
- 2 cloves
- 2 strands javitri
- 4 small onion puree
- 1 tsp ginger paste
- 1 tsp garlic paste
- 2 tsp cashew paste
- 1/4 tsp red chilli powder
- 1/4 tsp turmeric
- 1/2 tsp kitchen king masala
- 1/2 tsp meat masala
- 1/4 tsp garam masala
- 1/4 tsp sugar
- as required Water (few spoons)
- 150 ml milk
- 2 tsp cream
- 1 tbsp butter
- 1/4 tsp kewra water
- for garnish :
- 1 tsp kalonji seeds
- as required Butter as required
- as required Lemon wedges
- few Mint leaves
- For Bhurani raita :
- 400 grams curd
- 1 tsp garlic paste
- 1/2 tsp cumin powder
- 1/2 tsp red chilli powder
- to taste Salt
Instructions to make to make Awadhi Murg Stuffed Garlic Naan buns with Bhurani Raita
- First, wash the chicken. Grind the roasted spices, add in curd, salt and marinate with spices, salt and curd.
- For the naan dough. Add honey to lukewarm milk. Mix and sprinkle yeast. Mix cover and keep aside for 10 minutes. Add salt to flour and mix. Now make a dough with the proofed yeast and more lukewarm water as required. Stretch and pull dough for 12 to 15 minutes. Oil a deep bowl. Put the dough Cover and leave in a warm place to rise to double.
- In the meanwhile let's prepare the curry. Add oil to a saucepan. Fry the dry spices till it gives a nice aroma. Add the onion paste and roast till evenly browned. Add ginger paste and garlic paste. Cook further till the raw aroma disappears.
- Now add the cashew paste and cook. Add spice powders stir and add few tbsps of water. Mix and cook.
- Add butter and cream and cook further. Finish off with some kewra water. Cover and leave aside.
- Now cook the tikkas. Grill on a buttered saucepan till done. Add to the cooked gravy and mix. Let it cool completely.
- Melt butter add chopped garlic and coriander. Mix well. Keep the kalonji ready too
- Whisk the curd well. add garlic paste, salt and spice powders. Give a good mix. Bhurani raita is ready.
- Now preheat oven to 220 degrees. Grease baking tray or muffin tray if you are using with butter. Punch the dough. Pinch lemon sized balls and flatten on a floured surface. Add a tbsp and a half of Awadhi murg in the middle.
- Gather the edges. Pinch and seal. Make a round ball. Keep the seam side down in the greased baking tray.
- Make all such balls and place in the muffin tray.
- Brush generously with garlic butter. Sprinkle kalonji and bake at 180 degrees for 15 minutes and broil further for 3 minutes
- Remove and brush with more garlic butter.
- Serve with the ultimate accompaniment,the bhurani raita
